CAJUN RED BEAN BURGERS

Another spinoff from the hit show Slow and Low Red Beans and Rice, these little Cajun burgers are packed with flavor. Instead of starting out with a boring, old can of beans they begin with some delicious, slow-cooked red beans with onion, garlic and delicious sausage. These aren’t your run-of-the-mill vegetarian bean burgers. In fact, don’t let one of your vegetarian friends take a bite out of these bad boys—it might just turn them to the dark side.

2½ cups (443 g) Slow and Low Red Beans

½ cup (28 g) panko

2 tbsp (16 g) all-purpose flour

1 egg, beaten

½ tsp paprika

¼ tsp salt

¼ tsp pepper

1 cup (240 ml) olive oil

Sliced red onion, lettuce and buns, for serving

Creole Buttermilk Ranch, for serving

In a food processor, pulse the beans until coarsely chopped, and then transfer to a large mixing bowl. Add the panko, flour, egg, paprika, salt and pepper, and mix well. Divide the mixture into four equal parts. Shape into burger patties and refrigerate for 30 minutes.

Place the olive oil in a skillet over medium heat. Carefully place the bean patties in the pan two at a time. Cook for 4 minutes, and then flip. The burger should have begun to brown. Flip and cook for another 4 to 5 minutes on the other side. Remove from the heat and serve with your favorite burger condiments.
